It all starts with the trees. The Canadian Shield is rich with old-growth maples. Many of the trees we tap are 100, 200, or even 300 years old, consistently producing sap with a high sugar content.

We use a wood-fired evaporator, fuelled with sustainable hardwood available onsite. Our time-honoured bucket and tap process produces a high quality product. Traditional gravity-fed filtration has historically produced more award-winning syrup over more modern methods.
